Chicken Pot Pie Cups

I recently made this recipe for chicken pot pies 
in a muffin tin.  It was really easy and really yummy.
You can make a ton of variations of this recipe.
(chicken & broccoli, pepperoni pizza and so forth)


mix: 1/2 cup Bisquik
   1/2 cup milk
2 eggs  
This goes on the top and bottom of pot pie mixture

Pot pie mixture:
1 breast chicken cooked and shredded
1 cup carrots, diced
1/2 potato, diced
1/2 cup of peas
1/2 cup cheese
1/2 can of cream of chicken soup
(I put the carrots and potatoes in the 
microwave for a couple minutes to cook them a little)
Spray muffin tins with Pam
Fill an ice cream scoop 2/3 the way full of 
Bisquik mixture and put in each muffin cup.
Then fill with chicken mixture
then fill an ice cream scoop 1/4 the way full
and put on top of the chicken mixture
I top each one with a little cheese
Bake 375  25-30 minutes

A visit from a friend

Dawan came to visit in October.  We
went to dinner with Katy and Jared.
It was great to see her.
I miss having her to hang out with.

Hope she comes back to visit soon!

Christmas Parade 2012

Nash, Nic and I went to the Watkinsville
Christmas parade this year.  Nash remembered
going last year and all the candy that he got.  So this year
he came prepared with a bag.  It was a beautiful 
warm day- the perfect day for a parade!

Playa del Carmen Mexico 2012

I went on a fabulous trip to Mexico
in November.  I went to Playa del Carmen
and stayed at an all-inclusive resort and
it could not have been more awesome.
It was truly a relaxing and well needed
vacation.

We went on a tour of the Mayan Ruins,
the first one we went to was Tulum.
It was so incredible, the religious symbols that
they etched on their temples and the 
thing that they believed about 
having one God and that he came to earth 
then descended to heaven with the promise 
of returning again with a 1000 years of peace
obviously represented so many
things we believe in the LDS church
The spirit was so strong that
it was undeniable that the things we know
about the gospel are true.
It was one of the best experiences I've ever
had in my life and I'm so grateful 
I got to experience it.
After learning so much about the ancient people
in this area of the world there is no way
for me not to believe that Book of Mormon
 is a true book of the Lord.







We went swimming in an underground river
It was quite a climb down to it and once
I got in I was so freaked out cause the water was
freezing and it had little black fish in it.
I couldn't catch my breath at first.  I think I had my 
first mini panic attack.  But once I calmed down it was
pretty cool to be in there and look up at the vines
growing down.


This is the second ruins we went to called
Chichen Itza






This is a field that they used to play a 
"ball game" in.  There were 2 teams each had a 
captain and 6 players.  
The object was to get the ball through
the hole on the side of the wall but could only 
use their arms, legs or body.  
No hands or feet and only the
captain was to shoot the ball into the hole.
The first one to get the ball through won.
The prize was to be beheaded- the loser was the
one who had to do it.  Nice prize huh?
They believed that the winner would go and
live with the Gods.  They would then
etch the image of the winners skull into a 
stone and put it into a wall.

It was a great trip, I was not ready to come home.
The weather was so nice and so were
all the people.  We had a blast!!!
